The first nettles of the 2012 season for us.
While the spaghetti cooks, gently fry garlic & anchovies in extra virgin olive oil. Then add nettles to the pan and cover till they wilt. Season with salt, ground black pepper and lemon juice. Mix through lightly drained spaghetti with a good handful of finely grated Parmesan cheese. Delicious!

If your overwhelmed with nettles Zuppa alle Ortiche uses 600g; the taste is wonderful!
Onions, leeks, chicken stock,chilli, beaten egg yolks and parmesan cheese.
Thanks Elaine. My attitude to the nettles is now one of joy at the bounty and the free greens I have to hand. The soup thickened with eggs sounds like a really fun idea to try. Grazie mille 🙂
Not too many young nettles in Scotland yet either although I believe the evil weed is everywhere, all the time. I’m going to have a go at this, we have so many nettles I’m sure we could sell them!
Do have a try Janice. I’m sure you’ll really enjoy them and it’s a great way to get yor own back on the nettles.
Not see any young tender local nettles yet here in South Wales and the local wild garlic is still quite small…just need to give it an extra week or two here I guess…
